Notes on High Heat Cooking

This is another short video that needs some details filled in. So just how does one go about baking bread and other high heat items in their Weber kettle and how do we achieve a consistent high heat?
In short, the secret is multiple fires and the latest addition to our fire ring: our airflow foil. The airflow foil allows even distribution of the air flow to each fire, which results in a much higher heat than normally achievable in a kettle. The air flow foil can be seen on page 3 of or manual here.
If you already have a BBQitALL ring without an airflow foil, Simply make one out of heavy duty aluminum foil and fold it to a round shape . It doesn’t need to be perfect but it does need to set in the center of the ring as much as possible to allow even air flow to each fire lit. Make a 13.5” diameter foil for the 22” kettle, a 9.5" for the 18" and a 9" for the 14" kettle.
Light at least a half chimney full of charcoal for the 4 paths and pour them in when they are almost all ashed over. Pour even 4 piles as shown in the video and make sure you leave room for them to fit in the ring. An easy way to do this is to fill the BBQitALL ring first, then remove the coals from the ring to light in the chimney.
The fire paths will end up burning in both directions making essentially 8 fire paths. Now that’s hot! Hot enough to stay consistently abo e 500 degrees F! This provides the high heat you really need to make sourdough, pizza and certain other high heat foods. This technique also works really well for poultry.
